Because I have such a busy schedule, I decided a long time ago that if I did not take one day a week to spend with my granddaughters, I probably would not see them. So Wednesdays are our day! I LOVE Wednesdays, it is my favorite day of the week! As Ella and Sophia get a little older I thought it would be fun to start teaching them how to cook. And so, each Wednesday I plan something new and hopefully fun for them to learn. Several weeks ago we made fruit pizzas. Sophia was very tired this particular day so she missed out:( Anyway, Ella had so much fun creating her very own pizzas. She actually did a very good job. I have a great recipe that I thought I would share and a few short-cuts! So here is the recipe and some pictures of our day making fruit pizzas!
Fruit Pizza
1 cup butter
1 cup powdered sugar
1/3 cup sugar
1 egg
21/2 cups flour
21/2 teaspoons baking soda
21/2 teaspoons cream of tarter
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Frosting
16 oz. cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
Fresh fruits of choice: peaches, strawberries, kiwi, bananas, grapes, apples, Mandarin oranges or any berry
Orange Glaze
1/2 cup sugar
1 cup Orange juice
1/4 cup lemon juice (use fresh)
1/4 teaspoon grated orange peel
1/4 teaspoon grated lemon peel
4 teaspoons cornstarch
Preheat over to 350
Cream butter and sugars together until light and fluffy in a large bowl. Add egg, vanilla and almond extracts. Combine dry ingredients and add to creamed mixture. Divide dough in half. With lightly floured hands pat dough onto two greased pizza-type pans. Bake for 12-15 minutes.
To prepare frosting whip the cream cheese, powered sugar and vanilla. Spread mixture over cooled crust. Arrange fruit.
Combine orange glazed mixture all together. Cook over medium heat until mixture thickens. Stir in orange and lemon rind. After glaze has completely cooled drizzle over
fruit pizza and chill for at least one hour before serving.
The orange glaze in this recipe is what sets it apart from all other fruit pizza recipes. It is FABULOUs!
My secert short cut is to order sugar cookies un-frosted from Granite bakery.They will make a cookie as large as a 14 inch round or you can do these as individual cookies. Either why the cookies are very soft and delicious!
